Fat-Free Is No Bargain
If you rely on artificially reduced-fat foods to lower "bad"
LDL cholesterol, you're missing out on cholesterol-fighting
nutrients, fiber and plant sterols, Stanford University research
found.
For 4 weeks, 120 subjects ate diets based on either fat-free
processed foods--such as frozen pizza, lasagna, and waffles--or
whole foods, including fruits, vegetables, grains, and beans.
(Total and saturated fat, cholesterol, and calories were the
same.) LDL cholesterol dropped only by 7 points in the "fat-free"
eaters, but by 14 points in the whole-food group. Some strategies
would be instead of fat-free cheese and crackers try dried
bean soup cups that are low in sodium; for fat-free frozen
lasagna try veggie stir-fry with brown rice; fat-free cookies
try fresh fruit.
